Hey readers, it’s me Sara the founder of SCBD! So, I love the fact that my boyfriend Jason is a foodie like me! Weekends are always fun whether we are going out checking out a new spot or we’re cooking together. When we’re not cooking together, him and I take turns on who cooks. So every time he cooks I know I’m in for a treat and I love it, he’s my chef! He’s really good at cooking hearty, budget-friendly recipes. This weekend, along with many other delicious dishes he made this awesome chicken, better known as Jay’s Big Deal Small Chic-ken. He wanted me to share his awesome recipe with you all. I’m sure you will love it too!

Jay’s Big Deal Small Chic-ken

–INGREDIENTS-

  • 1 chicken (halved)
  • 1/2 cup fresh cilantro (chopped)
  • 1/4 cup fresh parsley (chopped)
  • 3 Tbs. Fresh rosemary (chopped)
  • 1 lemon zest (shavings of 1 whole lemon skin)
  • 1 whole lemon (squeezed)
  • 1-3 garlic cloves (chopped) and according to taste
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 cup oil

   For heat add Jalapenos or crushed red pepper according to taste

–STEPS–

  1. Place halved chicken open side down in pan (be sure you buy a whole chicken and have it halved but NOT separated into two different pieces).
  2. Sprinkle salt and pepper over chicken. 
  3. Combine cilantro, parsley, rosemary, lemon zest, lemon, garlic, salt,  pepper, and oil to make the marinade.
  4. Once all ingredients are mixed, spread/pour marinade over top of the chicken (it is recommended that it marinate for 24-hours).

–COOKING–

(Recommended) 

  1. Turn grill on to medium-high heat.
  2. Place chicken open side down on grill for 15-20 minutes. (Do not dump marinade over top as it will cause your chicken to flame up.)
  3. GENTLY BASE THE CHICKEN WITH A BRUSH!
  4. Flip over and grill for another 15-20 minutes and your done!! 
  5. Let cool and enjoy!

OR

(Baking) “A healthier option!”

  1. Pre-heat oven to 415 degrees
  2. Place chicken in pan with marinade into oven for about 45 minutes or until a golden brown.
  3. Remove! Cool and enjoy!!!

Our leftovers, even better the next day!

The recipe is definitely one of my new favorites and I hope he makes it again! The marinade is so delicious and compliments it so well! That’s the basic recipe but you can add cut red potatoes to the pan (in picture above) that make a great side & complete the meal! A huge plus is that you’ll definitely have leftovers to eat the next day, if they last that long!

#SCBD Quick & Easy Homemade Mac & Cheese Recipe

So I’ve decided its time to get a little personal with you all, 2013 has been quite a wild ride for me thus far. My year was off to a great start until I got laid off from my job in the beginning of the year. I am currently seeking a full time editorial, public relations, social media, and/or television production position. So when I’m not writing lately, I’ve been job hunting, in and out of the city. I feel incredibly blessed that I can write here for you all on Small Chick Big Deals and everything its brought me and the team. I have so many deals, discounts, reviews, and interviews on the way for you all and the team has tons of posts up their sleeves as well.  As you can see I’ve been working on more recipes lately. Well, on top of the many mishaps that have thrown my life a little of track lately, something tragic happened this week on top of that. My informal adviser who guided me throughout college and helped me with my schedule, passed away. Well, she was actually murdered, you can read the story, here. It’s tragic and I am still in shock, probably will be for awhile. But this has only reminded me to keep my head up and stay strong. These past couple weeks have been hard, but I know Rose (who passed away) would tell me to keep it up, not give up and keep it moving. She always believed in me and I am so thankful I knew her as long as I did.

So the day I found out she passed away I went to the grocery store, got some ingredients and planned on making dinner that night. I made Homemade Mac & Cheese to go with steak I bought. My Mac & Cheese recipe is so easy to make and will make you never want to buy that Kraft crap again. This recipe brought me the comfort I needed this week. I dedicate this recipe to Rosaria Andraka, my longtime adviser who was always there for me. RIP Rose ❤

Homemade Mac & Cheese- yum!

Ingredients:

  • 2 cups of pasta, I used Penne
  • 2 handfuls (or cups) of shredded cheese or cheeses of your choice, I used Mozzarella & Sharp Cheddar
  • 1 cup of half & half
  • 1 cup of skim milk
  • 4 Tablespoons of Butter
  • Salt, for taste

Instructions:

  1. Cook pasta as directed on box, strain so there is no water
  2. Put pasta back in the pot you cooked it in
  3. Add half & half and milk
  4. Turn on burner, leave on low-medium heat
  5. Add butter
  6. Mix so that is combined
  7. Add cheese
  8. Mix until sauce thickens, feel free to add more cheese as needed.
  9. When it’s to your liking– stir, serve, and enjoy!

Nothing screams comfort like Mac & Cheese, not to mention you have tons of leftovers and can always make different varieties of it. Next time, I plan on using bacon and cooking it in the oven the old fashioned way. This is just a quicker, healthier, and cheesier adaptation!

#DealAlert There Ain’t No Burger Like A Mark Burger…

If you love burgers and looking for a cheap meal in the city then Mark Burger, (rightfully located at 33 St. Marks Place) is the place for you. They serve huge shakes that pair perfectly with their sliders (you get 1 slider with every order). You also don’t want to pass up on their chili cheese fries.

Mark Burger is a great deal because their sliders start at $2.50 and are pretty big, topped with American Cheese and Grilled Onions. They also have an interesting take on a bacon burger because instead of it having it on top of the burger they put crumbled bacon into their meat mix which is a rarity in the city.

Trying one of their shakes is a must, they are huge but delicious. I had the black and white shake but they are known for their Guinness shake.

They have a lunch special 2 sliders, fries & a soda for $8 and happy hour Monday-Friday from 3-7pm.

Next time you’re in the Lower East Side and are looking for a quick, hearty bite that won’t break your budget go to Mark Burger…your stomach and wallet will thank you!

Almost two weeks ago before the anniversary dinner I went to Butter Lane Cupcakes in the East Village. Over the summer I won blogger of the week where I was able to  get a special deal to try their cupcakes which were delicious and nothing like any cupcake I’ve had (and I’ve had a lot).

 I saw they had a cupcake class available and thought it was about time for another visit. Butter Lane Cupcakes are unlike any other cupcake you’ll have because of their recipe which emphasizes on butter which I found out during the class I attended. Here are some facts on the classes they offer:

  • You learn how to make three cupcakes along with icings and mix-ins that pair with them
  • They are about 2 hours long, get there early because they start on time!
  • Use the mixer and oven the real cupcake masters use
  • Ice the cupcakes you made yourself
  • Taste the difference of Butter Lane Cupcakes mixes

#SCBD Quick & Easy Breakfast Burrito Recipe!

Ever since 2013 began my latest breakfast obsession has been breakfast burritos. They are great to eat for breakfast or brunch and can make a breakfast lover out of anyone. Breakfast has always been a meal I eat daily because I know I work better with a little or in this case a lot in my stomach. Also, if you are on the run this a great portable breakfast that will make your stomach and taste buds a bit happier. There are a few different techniques to making them, in fact the first time I made them was with my boyfriend and our friend’s New Year’s Day but here is my most effective recipe.

Ingredients:

  • 2-4 large eggs (depends on how many you plan on serving)
  • Salsa of choice
  • A pack of flour tortillas
  • Bacon (optional)
  • Salt & Pepper, for taste
  • Bag of shredded cheese (I prefer the Mexican Blend)

Instructions:

  1. If you plan on including bacon in your burrito prepare that first in a frying pan to your liking and put pieces on a plate with a paper towel so they aren’t as greasy.
  2. If you don’t plan on using bacon start by cracking eggs in a mixing bowl. Note: I use 2 eggs per burrito per person so if you are making for more than two people you may  need to use between 6-8 eggs but its up to you.
  3. Get out frying pan and spray with butter or olive oil spray, let it heat up for a minute or two.
  4. Whip eggs in mixing bowls, add salt & pepper and about a tablespoon or two of salsa.
  5. Pour egg mix into frying pan and scramble eggs to your liking.
  6. Once eggs are scrambled put them into a separate bowl.
  7. Spray pan with oil or butter spray again and heat tortillas over low heat to your liking.
  8. Put more salsa (if you want) and shredded cheese into separate bowls.
  9. Take your tortilla top with bacon, scrambled eggs, salsa and cheese to your liking.
  10. Fold into a burrito and enjoy!

#SCBD Quick & Easy Spinach & Rice Casserole Recipe

This recipe has tons of memories for me, it brings me back about 15 years to be exact. I remember when I was roughly 8 years old and in the kitchen watching my mom cook dinner, we made this.  It’s incredibly delicious, economically friendly, and really easy to make. It’s also perfect for these cold winter days not to mention you can eat it for breakfast, lunch, or even dinner!

Ingredients:

  • 1 10 oz. box of chopped frozen spinach
  • 2 cups of white rice
  • 3 eggs
  • 1 bag of shredded cheese (your choice, I used what was on hand)
  • Onion Powder
  • Garlic Powder
  • Salt
  • Pepper
  • Butter flavored spray

Instructions:

  1. Preheat your oven to 350 degrees and spray a pyrex or casserole pan with butter flavored spray and a light layer of shredded cheese on the bottom.
  2. If you haven’t already cook the two cups of white rice. If you already have rice in your refrigerator you can use that and put it in a large mixing bowl.
  3. In the meantime, heat up frozen spinach in the microwave for roughly ten minutes. Drain it so that there is no water in it and put that into a smaller mixing bowl. Add your eggs, garlic powder, onion powder, some shredded cheese, salt and pepper and whip it up in the bowl with the spinach.
  4. Put the spinach and egg mix in the large mixing bowl with the rice. Feel free to add more garlic and onion powder, salt, & pepper, and more shredded cheese if you want for more flavor and binding.
  5. Spread mix onto your pan or pyrex and smooth it out. Top with your cheese of choice so it covers the whole entire mix.
  6. Put it in the oven for about a half hour and the top is brown.
  7. Let cool for 2-3 minutes
  8. Cut into pieces & enjoy!

This is such a great recipe and is super easy especially if you have cooked rice lying around. I’m thinking of even trying it with kale one day instead of spinach. If you make it let me know what you think!

#SCBD ‘Spiked’ Adult Chocolate Milk Recipe

Ever have one of those days when you need a nightcap? Bailey’s Irish Cream has to be one of my favorite liquors, it’s flavorful, creamy and can be used in many cocktails & desserts. It can also be used in cocktails like spiked chocolate milk.

Adult Chocolate Milk

Here’s my recipe for simple yet delicious ‘spiked’ adult chocolate milk…

Ingredients:

  • 1 cup of Milk of choice (you may need more or less depending on your glass size)
  • 1 shot of Bailey’s Irish Cream
  • 1 teaspoon of Hershey’s Chocolate Syrup

Instructions:

  1. In a glass of your choice pour milk, shot of Bailey’s, & chocolate syrup.
  2. If you have a stirrer, stir to your liking if not use a spoon and mix it together so it looks like chocolate milk. Feel free to use or more less chocolate syrup and Bailey’s depending on how strong & chocolate tasting you like it.
  3. Once it’s the way you like it– sip & enjoy!

This recipe is so simple and delicious, perfect for dessert or a nightcap. Next time you think of buying a bottle of Adult Chocolate Milk, think again, the recipe is simple and only requires three ingredients!
